Sautéed Dandelion Greens with Coconut Milk

After trying to get creative with dandelion greens, I finally realized that I couldn’t come up with anything better than this simple recipe for Sauteed Coconut Kale (or dandelion greens) from CookSmarts.  When I made the CookSmarts recipe, I substituted dandelion greens for kale (which is one of the variations they suggest) and used slightly more coconut milk.

Dandelion greens are a great source of prebiotic fiber — the fiber that the good bacteria (probiotics) in our digestive tracks need to stay healthy, and in turn, keep us healthy and happy!

To learn more about the emerging science related to the bacteria that live in and on us, check out the the brand-new book, Gut Balance Revolution by Gerard E. Mullin, MD.

Enjoy and be healthy!
