After trying to get creative with dandelion greens, I finally realized that I couldn’t come up with anything better than this simple recipe for Sauteed Coconut Kale (or dandelion greens) from CookSmarts. When I made the CookSmarts recipe, I substituted dandelion greens for kale (which is one of the variations they suggest) and used slightly more coconut milk.
Dandelion greens are a great source of prebiotic fiber — the fiber that the good bacteria (probiotics) in our digestive tracks need to stay healthy, and in turn, keep us healthy and happy!
